  • 2 cups Medjool dates, pitted and chopped
  • 1 tablespoon baking powder
  • 2 large eggs
  • 1 cup almond flour (or regular all-purpose flour)

Instructions

  1. Begin by pitting your Medjool dates, then chop them into small pieces.
  2. In a large bowl, combine the chopped dates and baking powder. Stir to coat the dates.
  3. Crack the two large eggs into the bowl, and blend them into the date mixture.
  4. Gradually sprinkle in your choice of almond flour and mix until you have a sticky batter.
  5. Preheat your oven to 350°F (175°C) and pour the batter into a greased cake pan.
  6. Bake for about 30 minutes or until the top is golden brown.
  7. Once the cake is out of the oven, allow it to cool in the pan for a few minutes before transferring to a cooling rack.
  8. Slice your cake into squares or wedges and prepare to serve.
