A delicious, healthier twist on regular fries made in the air fryer, perfect for a snack or appetizer.

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Cut the zucchinis into fry-shaped sticks, about ½ inch thick.
  3. Prepare the coating mixture by mixing breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper in a bowl.
  4. Beat the eggs in another bowl until fully combined.
  5. Coat each zucchini fry in the egg mixture, then roll it in the breadcrumb mixture.
  6. Arrange the coated zucchini fries in a single layer in the air fryer basket.
  7. Spray the fries lightly with cooking spray.
  8. Air fry for 12-15 minutes or until golden and crispy, shaking the basket halfway through.
  9. Serve hot with your favorite dipping sauces.

Notes

For extra flavor, consider adding herbs to the breadcrumb mix or spices for heat.
