A delightful sweet and nutty bread that pairs perfectly with coffee or as a snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan to prepare it for the batter.
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. Combine melted butter, eggs, vanilla extract, and buttermilk in another bowl.
  4. Gradually add the wet ingredients to the dry ingredients. Stir until just combined.
  5. Fold in the chopped pecans, distributing them evenly throughout the batter.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Try toasting the pecans for enhanced flavor. If you don’t have buttermilk, mix milk with vinegar for a substitute.
