A delightful dessert that combines almond and amaretto liqueur for a rich and moist cake.

  • 1 1/2 cups almond flour
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup amaretto liqueur
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream (for filling)
  • 1/4 cup powdered sugar (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in the amaretto liqueur and vanilla extract.
  5. Whisk together almond flour, all-purpose flour, baking powder, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  10. Whip the heavy cream with powdered sugar until stiff peaks form for the filling.
  11. Spread a layer of whipped cream filling between the cakes and on top once cooled.
  12. Decorate with additional almond slices or amaretto drizzle, if desired.

Notes

For stronger almond flavor, consider using almond extract in addition to amaretto.
