Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup toasted almonds, chopped
  • 1/4 cup unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup Amaretto liqueur
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, chopped almonds, and melted butter. Press this mixture firmly into the bottom of the springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese and sugar together until smooth.
  4. Add in the eggs, one at a time, mixing well after each addition.
  5. Mix in the Amaretto liqueur, vanilla extract, and sour cream until well combined.
  6. Pour the cheesecake filling over the prepared crust.
  7. Bake in the preheated oven for 55-60 minutes, or until the center is set and a slight jiggle remains.
  8. Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.
  9. Remove from the oven and refrigerate for at least 4 hours or overnight before serving.

Notes

For a different flavor, substitute Amaretto with other flavored liqueurs or add chocolate caramel swirls.
