Ingredients
Scale
1.5 cups all-purpose flour
1 tsp baking soda
0.5 tsp baking powder
0.25 tsp salt
0.5 cups unsalted butter, softened
1 cup granulated sugar
2 large eggs
3 ripe bananas, mashed
1 tsp vanilla extract
0.5 cups sour cream
8 oz cream cheese, softened
0.25 cups unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
Instructions
Start by gathering all the ingredients. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set this dry mixture aside.
Cream together the softened unsalted butter and granulated sugar until light and fluffy.
Beat in the eggs, one at a time. Mix in the mashed bananas and vanilla extract until well combined.
Add the sour cream to the banana mixture and mix just until blended.
Gradually add the dry flour mixture to the banana mixture, stirring gently until combined.
Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack.
While the cake cools, prepare the cream cheese frosting by beating together the cream cheese and butter until creamy. Gradually add the powdered sugar and vanilla extract.
Once the cake has cooled, spread the cream cheese frosting over the top and sides.
Slice the cake and serve at room temperature.
Notes
Ensure bananas are very ripe for the best flavor. Customize with spices or nuts if desired.
