Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups peeled and diced apples

Instructions

  1. Preheat the oven to 350°F (180°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.
  3. In another bowl, combine the melted butter, buttermilk, eggs, and vanilla extract. Mix well until everything is thoroughly combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix!
  5. Gently fold in the diced apples, making sure they’re evenly distributed throughout the batter.
  6. Spoon the batter into the muffin tin, filling each cup about 2/3 full for the best rise.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool slightly before removing them from the tin. Serve warm and enjoy bites of comfort!
