A vibrant and hearty salad combining the sweetness of apples, the earthiness of kale, and crispy bacon, perfect for embracing the comforts of autumn.

Ingredients

Scale
  • 6 cups kale, stems removed and leaves chopped
  • 1 large apple, cored and diced (preferably Granny Smith)
  • 1/2 cup dried cranberries
  • 1/2 cup cooked bacon, crumbled (about 45 slices)
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup walnuts or pecans, toasted
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper, to taste

Instructions

  1. Prepare the kale by removing the tough stems and chopping the leaves into bite-sized pieces. Place the chopped kale in a large mixing bowl.
  2. Massage the kale with a pinch of salt for about 2-3 minutes until tender and slightly wilted.
  3. Add the diced apple, dried cranberries, crumbled bacon, sliced red onion, and toasted nuts to the bowl with the kale. Include feta cheese if using.
  4. Whisk together the olive oil, apple cider vinegar, honey or maple syrup, salt, and pepper in a separate bowl to make the dressing.
  5. Pour the dressing over the salad ingredients and toss thoroughly to coat.
  6. Taste and adjust seasoning with more salt or pepper as needed.
  7. Let the salad sit for 10-15 minutes before serving to allow flavors to meld.
  8. Serve the salad on individual plates or in a large serving bowl. Enjoy fresh!
