Delightful cupcakes that combine warm apples, spices, and a crumbly topping in a convenient treat form.

  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups peeled, diced apples
  • 1/2 cup oats
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs, milk, and vanilla extract, mixing well.
  4. Whisk together flour, baking powder, cinnamon, nutmeg, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Fold in the diced apples and oats.
  7. Fill cupcake liners about 2/3 full with batter.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Let cool completely before serving.

Notes

Serve warm or at room temperature. Top with powdered sugar or whipped cream if desired.
