An irresistible bread combining soft dough with a luscious apple filling, inspired by classic apple fritters.

Ingredients

  • 4 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/2 cups warm water (110°F)
  • 2 tbsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil
  • 2 medium apples, peeled and diced
  • 1 tsp cinnamon
  • 1/4 cup brown sugar
  • 1 tbsp lemon juice
  • 1/4 cup powdered sugar
  • 12 tbsp milk (for glaze)
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Combine the warm water, sugar, and yeast in a large bowl. Let it sit for 5-10 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour.
  5. Mix diced apples, cinnamon, brown sugar, and lemon juice in a bowl to create the filling.
  6. Preheat the oven to 375°F (190°C).
  7. Punch down the dough and spread it onto a greased baking sheet, creating dimples with your fingers.
  8. Add the apple filling over the dough, pressing it slightly into the surface.
  9. Bake for 25-30 minutes or until golden brown and the apples are tender.
  10. Let it cool slightly, then mix powdered sugar with milk to create a glaze and drizzle over the focaccia.

Notes

For a unique twist, add nutmeg or vanilla to the glaze. Store leftovers in an airtight container at room temperature for up to 2 days.
