A comforting dish that combines juicy chicken with sweet apples and rich maple syrup, perfect for cozy evenings.

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 2 large apples, cored and sliced (Granny Smith or Honeycrisp)
  • 1/2 cup maple syrup
  • 1 tablespoon Dijon mustard
  • 1 cup chicken broth
  • 2 tablespoons lemon juice
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Season the chicken breasts with salt, pepper, garlic powder, onion powder, and dried thyme evenly on both sides.
  4. Add the chicken breasts to the skillet and cook for about 5-6 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  5. Sauté the sliced apples in the same skillet for about 3 minutes until slightly softened.
  6. Mix together the maple syrup, Dijon mustard, chicken broth, and lemon juice in a small bowl.
  7. Pour this mixture into the skillet with the apples, scraping up any brown bits from the bottom of the pan.
  8. Return the chicken to the skillet, nestling it among the apples, and spoon some sauce over the chicken.
  9. Bring to a gentle simmer, then transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through.
  10. Remove the skillet from the oven and let it rest for a few minutes before serving.
  11. Serve the chicken topped with apple-maple sauce and garnish with fresh parsley if desired.

Notes

This dish pairs well with mashed potatoes or a crisp salad. Leftovers can be stored for up to 3 days.
