  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 garlic clove, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Slice the cucumbers thinly. You can use a sharp knife or a mandoline for that perfect cut.
  2. Whisk together rice vinegar, soy sauce, sesame oil, sugar, minced garlic, and red pepper flakes in a separate bowl.
  3. Pour the dressing over the sliced cucumbers and toss to coat.
  4. Allow the salad to sit for at least 15 minutes to absorb the flavors.
  5. Sprinkle the sliced green onions and sesame seeds over the top before serving.
