A delightful pasta dish combining roasted butternut squash and Italian sausage, perfect for cozy autumn gatherings.

  • 1 butternut squash, peeled and cubed
  • 8 ounces pasta (your choice)
  • 1 pound Italian sausage, casings removed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups spinach (optional)
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Spread the cubed butternut squash on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 25-30 minutes until tender.
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. Sauté the sausage over medium heat until browned and cooked through. Add the diced onion and garlic, cooking until the onion is translucent.
  4. Stir in the roasted butternut squash and cooked pasta into the skillet with the sausage mixture. If using, add the spinach and cook until wilted.
  5. Season with additional salt and pepper as needed. Serve hot, topped with grated Parmesan cheese.

Notes

For added flavor, consider using fresh herbs or red pepper flakes. Leftovers can be stored in an airtight container for up to 3 days.
