Ingredients

Scale
  • 1 lb Brussels sprouts, trimmed and halved
  • 4 slices bacon, diced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the diced bacon in a large skillet over medium heat until crispy, about 5-7 minutes.
  3. Remove the bacon and drain on paper towels.
  4. Reserve 1 tablespoon of the bacon fat in the skillet and discard the rest.
  5. Add the halved Brussels sprouts to the skillet with the reserved bacon fat and drizzle with olive oil. Season with salt and black pepper to taste. Sauté for about 5 minutes, stirring occasionally.
  6. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  7. Transfer the Brussels sprouts and garlic mixture onto a baking sheet in a single layer.
  8. Roast in the preheated oven for about 15-20 minutes, or until tender and crispy.
  9. Remove from the oven and drizzle with balsamic vinegar, if using.
  10. Mix the cooked bacon back in with the roasted Brussels sprouts.
  11. Serve immediately as a delicious side dish.

Notes

For extra crunch, try broiling the sprouts for the last couple of minutes. Use a cast-iron skillet for better heat retention.
