A delicious and easy breakfast option featuring crispy bacon, fluffy eggs, and melted cheese wrapped in a tortilla.

Ingredients

  • 1 8-inch flour tortilla
  • 2 slices cooked and chopped bacon
  • 2 large eggs
  • 1/3 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 teaspoon butter (optional)

Instructions

  1. Beat the eggs with salt and pepper in a small bowl.
  2. Heat a non-stick frying pan over medium-low heat and add butter if desired.
  3. Pour the egg mixture into the pan and cook until the edges begin to set.
  4. Sprinkle half the bacon and cheese over the eggs, then press a tortilla on top.
  5. Flip the quesadilla using a spatula and cook for 2-3 minutes until golden.
  6. Add the remaining bacon and cheese on one half, fold, and cook until cheese melts.
  7. Transfer the quesadilla onto a cutting board, let rest, and slice into wedges.

Notes

Serve warm with salsa, hot sauce, or avocado. You can also pair it with a smoothie or fresh fruit.
