Indulge in these rich and fudgy brownies enhanced with Baileys Irish Cream, topped with a velvety chocolate ganache for an unforgettable treat.

Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup Baileys Irish Cream
  • 1 cup chocolate chips
  • 1/2 cup heavy cream (for ganache)
  • 8 ounces semi-sweet chocolate (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Melt the butter in a saucepan over medium heat. Once melted, remove from heat and stir in the sugar, eggs, and vanilla until well combined.
  3. Add in the flour, cocoa powder, and salt, stirring until just combined.
  4. Fold in the Baileys Irish Cream and chocolate chips.
  5. Pour the batter into the prepared baking pan and spread it evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  7. Heat the heavy cream in a saucepan until it just begins to simmer for the ganache.
  8. Pour the hot cream over the chopped chocolate and let it sit for 2 minutes, then whisk until smooth.
  9. Once the brownies have cooled, pour the ganache over the top and spread evenly.
  10. Let the brownies set before slicing and serving.

Notes

Serve warm with vanilla ice cream or a dollop of whipped cream. A sprinkle of sea salt adds a lovely contrast to the sweetness.
