A delightful baked feta pasta dish featuring burst cherry tomatoes and creamy feta cheese, perfect for weeknight dinners.

Ingredients

  • 8 oz pasta of choice
  • 1 block of feta cheese
  • 2 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) to ensure it’s at the perfect temperature for baking.
  2. In a baking dish, add cherry tomatoes, feta cheese, and minced garlic. Drizzle with olive oil, and season with salt and pepper.
  3. Bake in the preheated oven for 30 minutes, or until the tomatoes burst and the feta turns golden.
  4. Cook 8 oz of your favorite pasta according to the package instructions.
  5. Once baking is done, mash the baked feta and tomatoes together until creamy, mixing them with the cooked pasta.
  6. Serve hot, garnished with fresh basil leaves.

Notes

Pairs well with a crisp green salad or garlic bread. Can be made ahead of time and stored for up to 3 days.
