A comforting and hearty pasta dish with creamy feta cheese and roasted cherry tomatoes, perfect for busy weeknights or dinner parties.

Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1 block (8 oz) feta cheese
  • 2 cups cherry tomatoes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the cherry tomatoes, olive oil, minced garlic, red pepper flakes (if using), salt, and pepper in a baking dish.
  3. Place the block of feta cheese in the center of the tomato mix.
  4. Bake for 30 minutes until the tomatoes burst and the feta is soft.
  5. Cook the pasta according to package instructions until al dente.
  6. Mix the baked feta and tomatoes together, then add the cooked pasta and stir until combined.
  7. Garnish with fresh basil and serve immediately.

Notes

Feel free to swap ingredients based on your taste and pantry. Don’t skip the fresh basil as it truly elevates the dish.
