A simple yet delicious recipe for roasted asparagus drizzled with balsamic vinegar and topped with Parmesan, perfect as a side or light main dish.

  • 1 pound fresh asparagus
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • Salt and pepper to taste
  • Shaved Parmesan or toasted almonds for topping

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the woody ends off the asparagus.
  3. Season the asparagus with olive oil, minced garlic, salt, and pepper.
  4. Roast in the oven for about 15-20 minutes until tender.
  5. Drizzle balsamic vinegar over the roasted asparagus.
  6. Top with shaved Parmesan or toasted almonds and serve warm.
