Delightful and gooey cinnamon rolls infused with the sweetness of ripe bananas, topped with a creamy frosting, perfect for breakfast or a snack.

Ingredients

  • 2 ripe bananas, mashed
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 cup powdered sugar (for frosting)
  • 1 tablespoon milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. Combine the mashed bananas, granulated sugar, brown sugar, and melted butter in a mixing bowl.
  3. Add the eggs and vanilla extract to the banana mixture, mixing well.
  4. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  5. Combine the dry ingredients with the banana mixture, stirring until just mixed.
  6. Make the filling by mixing the ground cinnamon and brown sugar in a small bowl.
  7. Roll out the dough into a rectangle about 1/2 inch thick on a floured surface.
  8. Spread the melted butter over the dough and sprinkle with the cinnamon sugar mixture.
  9. Roll tightly from one end to form a log and seal the edges.
  10. Slice the log into 1-inch thick pieces and place them in the baking dish.
  11. Bake for 25-30 minutes until golden brown.
  12. Prepare the frosting by whisking powdered sugar and milk until smooth.
  13. Drizzle the frosting over the warm rolls and enjoy!
