Delicious and moist banana bread muffins, perfect for breakfast or a wholesome snack.

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the bananas until smooth.
  3. Incorporate the melted butter into the bananas.
  4. Add baking soda and a pinch of salt.
  5. Sweeten with sugar, beaten egg, and vanilla extract.
  6. Fold in the flour until just incorporated.
  7. Spoon the batter into a greased muffin tin.
  8. Bake for about 20-25 minutes.
  9. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

Best enjoyed fresh but can be stored in an airtight container for up to 3 days or frozen for up to 3 months.
