Fluffy and light banana pancakes that bring warmth and joy to your mornings.

Ingredients

  • 2 ripe bananas
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract

Instructions

  1. Mash the bananas until smooth.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Mix the milk, egg, melted butter, and vanilla extract in a separate bowl.
  4. Combine the wet and dry ingredients, being careful not to overmix.
  5. Heat a skillet over medium heat and lightly grease it.
  6. Pour 1/4 cup of batter for each pancake onto the skillet.
  7. Cook until bubbles form, then flip and cook until golden brown.
  8. Serve warm with syrup or fresh fruit.

Notes

For extra flavor, add chocolate chips or cinnamon. Store leftovers in the fridge for up to 3 days.
