A colorful medley of crispy rice, tender shredded chicken, and fresh vegetables, all coated in a creamy, spicy bang bang sauce.

  • 2 tablespoons vegetable oil
  • 2 chicken breasts, cooked and shredded
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • 1/4 cup cilantro leaves
  • 1 lime, cut into wedges
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat the vegetable oil in a large nonstick skillet over medium-high heat until shimmering. Add the chilled jasmine rice, pressing it down gently with a spatula into an even layer.
  2. Cook the rice undisturbed for 5 to 7 minutes until the bottom turns a rich golden brown and develops a crisp crust. Carefully flip sections of rice using a spatula and crisp the other side for an additional 3 to 4 minutes.
  3. In a medium bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, and sugar until smooth and creamy to form your signature bang bang sauce. Taste and adjust the spice level to your preference!
  4. Toss the shredded chicken in half of the prepared sauce, ensuring each strand is evenly coated. Set aside to infuse the flavors.
  5. In a clean bowl, combine the shredded cabbage, shredded carrots, sliced green onions, and cilantro. Season with salt and pepper, then toss everything together to create a vibrant vegetable slaw.
  6. Divide the crispy rice among serving plates. Heap on the crunchy vegetable slaw, followed by the sauced chicken. Drizzle the remaining sauce over the top for that extra creaminess.
