A Lebanese roasted potato dish spiced with paprika and cayenne pepper, finished with a drizzle of lemon juice and fresh herbs.

Ingredients

  • 2 large potatoes, peeled and cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh cilantro or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C), letting it warm up before roasting those potatoes to crispy perfection.
  2. Toss the potato cubes with olive oil, paprika, cayenne pepper, garlic powder, salt, and pepper until well coated.
  3. Spread the potatoes on a baking sheet in a single layer.
  4. Roast in the oven for about 25-30 minutes, turning once midway through.
  5. Remove from the oven, drizzle with lemon juice, and toss to combine.
  6. Garnish with fresh cilantro or parsley before serving.

Notes

Serve alongside grilled meats or fish, and store leftovers in an airtight container for up to 3 days.
