A hearty and colorful dish featuring roasted sweet potatoes, seasoned BBQ chicken, and fresh toppings that create a comforting meal perfect for gatherings.

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 boneless skinless chicken breasts
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ cup BBQ sauce
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 avocado sliced
  • ¼ cup red onion diced
  • ¼ cup cilantro chopped
  • 1 tablespoon lime juice

Instructions

  1. Prep your oven to 400°F and line a baking sheet with foil.
  2. Peel and chop the sweet potatoes into bite-sized pieces.
  3. Toss the sweet potato chunks with olive oil, salt, and pepper.
  4. Spread them in a single layer on the baking sheet.
  5. Roast the sweet potatoes for about 25-30 minutes, or until fork-tender.
  6. Combine smoked paprika, garlic powder, chili powder, salt, and pepper in a bowl.
  7. Rub the spice blend all over the chicken breasts.
  8. Brush both sides of the chicken with BBQ sauce.
  9. Heat a skillet over medium heat and cook the chicken for 6-8 minutes on each side.
  10. Warm the black beans and corn until heated through.
  11. Rest the chicken for about 5 minutes before slicing.
  12. Assemble the bowls with roasted sweet potatoes, black beans, corn, chicken, red onion, and avocado.
  13. Drizzle with lime juice and sprinkle cilantro before serving.

Notes

For a vegetarian version, substitute the chicken with tofu or tempeh. Feel free to mix in different vegetables to customize your bowl.
