Beef Enchilada Casserole

A warm and comforting beef enchilada casserole layered with tortillas, seasoned beef, and gooey cheese.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 10 ounces red enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Heat the vegetable oil in a large skillet over medium heat.
  3. Add the diced onion and cook until softened, about 3 minutes.
  4. Stir in the minced garlic, cooking for just 1 minute until fragrant.
  5. Add the ground beef and cook until browned, breaking up the meat with a spoon.
  6. Sprinkle the chili powder, cumin, salt, and black pepper over the beef and stir to combine.
  7. Pour half of the enchilada sauce into the beef mixture and let it simmer for 2 minutes.
  8. Spread a thin layer of sauce on the bottom of a 9×13 inch baking dish.
  9. Arrange four tortillas in the dish, tearing them if necessary.
  10. Spoon half of the beef mixture over the tortillas and sprinkle with 1 cup of the shredded cheese.
  11. Repeat with the remaining tortillas, beef, and cheese for a second layer.
  12. Pour the remaining enchilada sauce over the top.
  13. Bake uncovered for 20 minutes or until the cheese is melted and bubbly.
  14. Let the casserole stand for 5 minutes before slicing and serving.

Notes

Serve with sour cream, cilantro, and diced avocados for added freshness. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 2 months.
