A comforting plate of cheesy, savory enchiladas filled with seasoned ground beef, topped with enchilada sauce and gooey cheese.

Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) enchilada sauce
  • 8 flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 onion, chopped
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Sour cream (for serving)
  • Chopped cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef and chopped onion in a skillet over medium heat until browned.
  3. Stir in the garlic powder, cumin, salt, and pepper, cooking for about a minute.
  4. Pour half of the enchilada sauce into the bottom of a baking dish.
  5. Place the beef mixture in the center of each tortilla, sprinkle with cheese, roll them up, and place seam-side down in the baking dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with more cheese.
  7. Bake for 20-25 minutes until the cheese is bubbly and browned.
  8. Serve hot, topped with sour cream and cilantro.

Notes

For extra flavor, consider adding black beans or corn to the beef mixture.
