Beef Stifado

A traditional Greek stew, rich with tender beef, aromatic spices, and a deep flavor, perfect for gatherings or quiet evenings.

Ingredients

  • 2 pounds beef chuck, cut into chunks
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1 cup red wine
  • 1 cup beef broth
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1 pound pearl onions, peeled
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the beef chunks and brown on all sides. Remove beef and set aside.
  2. In the same pot, add chopped onion and minced garlic, and sauté until soft and fragrant.
  3. Return the browned beef to the pot and add diced tomatoes, red wine, beef broth, cinnamon, and ground cloves. Season with salt and pepper to taste.
  4. Bring the mixture to a simmer, then cover and reduce the heat to low. Cook for 90 to 120 minutes, or until the beef is tender.
  5. Add the peeled pearl onions in the last 30 minutes of cooking and allow them to sweeten in the stew.
  6. Serve hot, garnished with freshly chopped parsley for a pop of color.

Notes

This dish tastes even better the next day. Serve with crusty bread or rice to soak up the flavorful sauce.
