A simple and delicious stir-fry featuring marinated beef and vibrant vegetables, perfect for a weeknight dinner.

Ingredients

  • 1 pound beef, thinly sliced
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1 cup snap peas
  • 2 tablespoons vegetable oil
  • Cooked rice or noodles, for serving

Instructions

  1. Marinate the beef with soy sauce, garlic, and ginger for at least 15 minutes.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat.
  3. Add the marinated beef to the hot pan and cook until browned.
  4. Toss in the bell pepper, broccoli, carrots, and snap peas. Stir-fry for 5-7 minutes.
  5. Serve your stir-fry hot over rice or noodles.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For even easier prep, buy pre-sliced beef or frozen stir-fry veggie mixes.
