A colorful and healthy twist on traditional nachos using bell peppers as the base, topped with black beans, corn, cheddar cheese, and zesty toppings.

  • 4 bell peppers
  • 1 cup shredded cheddar cheese
  • 1 can black beans, drained
  • 1 cup corn
  • 1/2 cup sour cream
  • 1 cup salsa
  • 1 jalapeño, sliced
  • Fresh cilantro, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the bell peppers in half lengthwise and remove the seeds.
  3. Place the bell pepper halves on a baking sheet.
  4. Spoon black beans and corn into each bell pepper half.
  5. Generously sprinkle shredded cheddar cheese on top.
  6. Bake in the oven for about 15-20 minutes until the cheese is melted and bubbly.
  7. Remove from the oven and top with sour cream, salsa, sliced jalapeños, and chopped cilantro.
  8. Serve warm as a delicious appetizer or snack.

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. Reheat in the oven to restore crispness.
