A delightful Berry Chantilly Cake with fluffy layers of vanilla cake, light Chantilly cream, and a vibrant medley of mixed berries, perfect for celebrations.

Ingredients

  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 box vanilla cake mix (plus ingredients to prepare)
  • 1 cup mascarpone cheese
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Prepare the vanilla cake mix according to package instructions and bake in two round cake pans. Let cool completely.
  2. In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  3. Gently fold in the mascarpone cheese until fully combined, creating a luscious cream.
  4. Place one layer of cake on a serving plate and spread a layer of the Chantilly cream. Top with mixed berries.
  5. Place the second layer of cake on top and repeat with the remaining cream and berries.
  6. Garnish with fresh mint leaves if desired. Chill for at least 30 minutes before serving.

Notes

Store leftover slices in an airtight container in the refrigerator for up to three days. Freeze without berries and cream for up to two months.
