  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups almond milk (or any plant-based milk)
  • 1/3 cup maple syrup (or honey for non-vegan option)
  • 1 teaspoon vanilla extract
  • 1/4 cup melted coconut oil (or any neutral oil)
  • 1/4 cup brown sugar
  • Chopped nuts
  • Fresh fruits (like bananas or berries)
  • Additional maple syrup for drizzling

Instructions

  1. Combine the dry ingredients: whisk rolled oats, baking powder, ground cinnamon, and salt in a large bowl.
  2. Mix the wet ingredients: in another bowl, combine almond milk, maple syrup, vanilla extract, melted coconut oil, and brown sugar until well combined.
  3. Combine the wet and dry mixtures, stirring until everything is well coated.
  4. Prepare the baking dish: grease a 9×9 inch baking dish with coconut oil or non-stick spray.
  5. Add your mix-ins: fold in chopped nuts and fresh fruits of choice.
  6. Bake to perfection: pour the mixture into the baking dish and bake in a preheated oven at 350°F (175°C) for 30-35 minutes until golden brown.
  7. Cool and slice: allow to cool for 10 minutes before slicing.
