Delightful and refreshing lemon raspberry swirl bars that are easy to make and perfect for any occasion.

Ingredients

  • 1 cup of all-purpose flour
  • 1/2 cup of granulated sugar
  • 1/2 cup of unsalted butter, softened
  • 2 large eggs
  • 1/4 cup of lemon juice
  • 1 tablespoon of lemon zest
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1 cup of fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan.
  2. Cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the lemon juice and lemon zest.
  4. Whisk together the flour, baking powder, and salt in a separate bowl. Gradually add this to the wet mixture, mixing until just combined.
  5. Pour half of the batter into the prepared pan.
  6. Drop spoonfuls of raspberries over the batter, then swirl with a knife.
  7. Pour the remaining batter over the top and add more raspberries if desired.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool before cutting into bars.

Notes

Serve at room temperature. Dust with powdered sugar for an elegant touch or serve with vanilla ice cream.
