  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon pure vanilla extract
  • ½ cup rainbow sprinkles
  • Powdered sugar (for dusting, to taste)
  • Cream cheese frosting (for topping, to taste)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 12-cup muffin tin with cupcake liners or grease lightly.
  3. Whisk together the flour, baking powder, and salt in a mixing bowl.
  4. Cream together the softened butter and granulated sugar until light and fluffy.
  5. Add the eggs and vanilla extract, beating until well combined.
  6. Combine the dry ingredients with the wet mixture alternately with the milk, stirring just until combined.
  7. Fold in the rainbow sprinkles gently with a spatula.
  8. Fill each muffin cup about two-thirds full with batter.
  9. Bake for approximately 18-20 minutes, or until a toothpick comes out clean.
  10. Cool for 5 minutes in the tin before transferring to a wire rack. Dust with powdered sugar and top with cream cheese frosting if desired.
