Experience the rich flavors of birria tacos, made with tender beef in a savory chile sauce and served in warm corn tortillas, topped with fresh onions and cilantro.

  • 2 lbs beef chuck, cut into cubes
  • 2 lbs beef shank
  • 3 dried guajillo chiles
  • 3 dried ancho chiles
  • 2 cloves garlic
  • 1 onion, quartered
  • 2 bay leaves
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped onions
  • Chopped cilantro
  • Lime wedges

Instructions

  1. Prepare the Beef: In a pot, add beef chuck and shank with enough water to cover. Add quartered onion, bay leaves, garlic, cumin, oregano, salt, and pepper.
  2. Simmer to Perfect Tenderness: Boil the mixture for about 120-180 minutes until the meat is incredibly tender.
  3. Toast the Chiles: Meanwhile, toast the dried chiles in a dry skillet until fragrant, then soak them in hot water for about 15 minutes.
  4. Blend the Chiles: Blend the soaked chiles with a little of the soaking liquid until smooth.
  5. Combine Beef and Sauce: Once the beef is done cooking, shred the meat and mix it with the blended chile sauce.
  6. Assemble the Tacos: Heat your tortillas on a skillet, fill each tortilla with the birria mixture and serve with chopped onions, cilantro, and lime wedges.

Notes

Tacos can be served with rice, beans, or salsa. Leftovers keep well in the fridge for up to 3 days, or can be frozen for 3 months.
