A delightful blackberry cobbler featuring juicy blackberries and a buttery cake-like topping, perfect for summer gatherings.

Ingredients

  • 2 cups fresh blackberries
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup butter, melted
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the blackberries with 1/4 cup of sugar and set aside.
  3. Combine the flour, remaining sugar, baking powder, and salt in another bowl.
  4. Stir in the milk and melted butter until just combined. The batter should be smooth but not over-mixed.
  5. Pour the batter into a greased baking dish, spreading it gently to create an even layer.
  6. Scatter the prepared blackberries over the top of the batter, ensuring they’re evenly distributed.
  7. Bake for 40-45 minutes, or until the cobbler is golden brown and bubbly around the edges.
  8. Let it cool slightly before serving, allowing the flavors to meld.
