Delicious tacos featuring crispy blackened Mahi Mahi, fresh toppings, and warm corn tortillas, perfect for a weeknight meal or gathering.

Ingredients

  • 2 Mahi Mahi fillets
  • 2 tablespoons blackening seasoning
  • 8 small corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup pico de gallo
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your skillet over medium-high heat and add a little olive oil to the pan.
  2. Season the Mahi Mahi fillets with blackening seasoning.
  3. Sauté the fillets in the hot skillet for about 3-4 minutes on each side until cooked through.
  4. Remove the fish from the skillet and let it rest for a couple of minutes.
  5. Warm the corn tortillas in the same skillet for about 30 seconds on each side.
  6. Flake the cooked Mahi Mahi into bite-sized pieces.
  7. Assemble the tacos on each tortilla with cabbage, flaked Mahi Mahi, pico de gallo, and avocado slices.
  8. Serve with lime wedges on the side.

Notes

Pairs well with a side of black bean salad or cilantro-lime rice. Leftovers can be stored in an airtight container in the fridge for up to 2 days.
