Delicious and vibrant Blackened Shrimp Bowls with smoky shrimp, fresh avocado, corn, and tomatoes, all drizzled with zesty lime juice.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons blackening seasoning
  • 1 tablespoon olive oil
  • 2 cups cooked rice
  • 1 cup corn (fresh or canned)
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Season the shrimp with blackening seasoning in a bowl.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook the shrimp for 2-3 minutes on each side until slightly charred.
  4. Construct a base of cooked rice in serving bowls.
  5. Top the rice with blackened shrimp, corn, avocado, and cherry tomatoes.
  6. Drizzle with lime juice and sprinkle with salt, pepper, and cilantro. Serve immediately.

Notes

For a vegetarian version, substitute shrimp with marinated tofu or chickpeas. Prep the ingredients ahead of time for a quick meal.
