A whimsical Blue Velvet Cake with a velvety texture and tangy cream cheese frosting, perfect for celebrations.

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon vinegar
  • 2 tablespoons cocoa powder
  • 1 tablespoon blue food coloring
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing them and lining the bottoms with parchment paper.
  2. Combine the flour, sugar, cocoa powder, and salt in a large bowl. Whisk until well blended.
  3. Mix together the vegetable oil, buttermilk, eggs, and vanilla extract in a separate bowl.
  4. Blend the wet ingredients into the dry mixture until just combined.
  5. Add the baking soda, vinegar, and blue food coloring, folding until well combined.
  6. Pour the batter evenly into the prepared cake pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool the cakes completely in the pans before transferring to a wire rack.
  9. Frost with cream cheese frosting between the layers and on the outside once the cakes are cooled.

For best results, use room temperature ingredients. Store leftovers in an airtight container for up to 5 days.
