A delicious and nutritious chia seed pudding made with fresh blueberries, perfect for breakfast or dessert.

Ingredients

Scale
  • 1/4 cup chia seeds
  • 1 cup milk (or dairy-free alternative)
  • 1 cup fresh blueberries
  • Sweetener of choice (optional, e.g., honey or maple syrup)
  • Vanilla extract (optional)

Instructions

  1. Mix together chia seeds, milk, and sweetener (if using) in a bowl or jar. Stir well to combine and avoid clumps.
  2. Let the mixture sit for about 5 minutes, then stir again to prevent chia seeds from settling.
  3. Add fresh blueberries and vanilla extract (if using) and mix well.
  4. Cover the bowl or jar and refrigerate for at least 120 minutes or overnight.
  5. Once set, give it a good stir before serving. Enjoy it as a creamy dessert or a nutritious breakfast.

Notes

Store any leftover pudding in an airtight container in the refrigerator for up to 5 days. If it thickens too much, add a splash of milk to reach your desired consistency.
