Delightful blueberry cookies that blend the sweetness of blueberries with a soft, buttery base.

Ingredients

  • 1 cup fresh blueberries
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Combine the flour, baking soda, and salt in a separate bowl. Gradually add this mixture to the wet ingredients, mixing until just combined.
  5. Fold in the fresh blueberries.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Store cookies in an airtight container for up to one week or freeze for up to three months.
