A warm and delightful baked dish combining creamy cottage cheese with rolled oats and fresh blueberries, perfect for breakfast or a snack.

  • 1 1/2 cups cottage cheese
  • 1 1/2 cups rolled oats
  • 1/2 cup milk
  • 1/4 cup honey
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9-inch baking dish with butter or cooking spray.
  3. Combine the cottage cheese, rolled oats, milk, honey, baking powder, cinnamon, and salt in a large mixing bowl.
  4. Whisk the mixture together until it is smooth and well combined.
  5. Add the eggs and vanilla extract. Beat the eggs into the mixture until thoroughly incorporated.
  6. Fold in the fresh blueberries gently to avoid crushing them.
  7. Spread the mixture into the prepared baking dish, spreading it out evenly.
  8. Dot the top with small pieces of butter.
  9. Bake for about 35 to 40 minutes, or until golden brown and a toothpick inserted comes out clean.
  10. Cool for about 5 minutes before slicing and serving.

Notes

Pair with Greek yogurt and honey for extra flavor. Leftovers can be stored in the refrigerator for up to 3 days.
