A delightful loaf of blueberry cream cheese bread that is tender, moist, and perfect for breakfast or dessert.

  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese, softened
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then stir in the milk and vanilla extract.
  5. Combine the flour mixture gradually with the wet ingredients until just mixed.
  6. Prep the cream cheese by mashing it in a small bowl until smooth.
  7. Fold in the cream cheese and blueberries until evenly distributed.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes, or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack.
  11. Slice and serve warm or at room temperature.
