A delightful treat that combines juicy blueberries with a buttery crumb topping, perfect for breakfast, brunch, or dessert.

Ingredients

  • 2 cups fresh or frozen blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the blueberries, granulated sugar, lemon juice, and cornstarch in a medium bowl.
  3. Mix together the flour, baking powder, and salt in another bowl.
  4. Cream together the softened butter and brown sugar until light and fluffy.
  5. Add the egg and vanilla extract to the butter-sugar mixture.
  6. Gradually add the flour mixture to the butter mixture until the dough becomes crumbly.
  7. Press half of the crumb mixture into the bottom of a greased baking dish.
  8. Spread the blueberry mixture evenly over the crust.
  9. Crumble the remaining dough over the top of the blueberry layer.
  10. Bake for 30-35 minutes until golden brown.

Notes

Store any leftover bars in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. Use riper blueberries for sweeter taste.
