  • 1 cup fresh blueberries
  • 1 tablespoon lemon zest
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl until well combined.
  3. Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  4. Fold in the fresh blueberries and lemon zest gently, ensuring the berries remain intact.
  5. Mix the heavy cream, egg, and vanilla extract together in another bowl until combined.
  6. Combine the wet ingredients with the dry ingredients and stir gently until just combined. Do not overmix.
