Deliciously soft and moist blueberry muffins that are easy to make and perfect for any time of day.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
  2. Mix the flour, sugar, baking powder, and salt in a large bowl until well combined.
  3. Whisk together the melted butter, milk, eggs, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the blueberries carefully.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack.

Notes

For a fun flavor twist, try adding lemon zest or swapping blueberries for strawberries or nuts.
