Delight in these colorful and nutritious Blueberry Swirl Yogurt Bites, a refreshing treat perfect for any time of day!

Ingredients

  • 1 cup fresh or frozen blueberries
  • 2 tablespoons granulated sugar or honey (adjust to taste)
  • 1 tablespoon water
  • 1 teaspoon lemon juice
  • 1/2 teaspoon cornstarch mixed with 1 tablespoon cold water (optional)
  • 2 cups Greek yogurt, plain or vanilla
  • 2–3 tablespoons honey or maple syrup, to taste
  • 1 teaspoon pure vanilla extract (omit if using vanilla yogurt)
  • 1 small pinch fine sea salt
  • 1/2 cup granola or crushed digestive biscuits (optional)
  • 2 tablespoons finely chopped nuts (optional)
  • 1–2 tablespoons shredded coconut (optional)
  • Nonstick cooking spray or neutral oil for greasing molds

Instructions

  1. Prepare the Blueberry Swirl: In a small saucepan, combine blueberries, sugar or honey, and water. Cook over medium heat for 5-7 minutes until berries burst. Mash slightly, stir in lemon juice, and cool.
  2. Prepare the Yogurt Base: In a bowl, mix Greek yogurt with honey or maple syrup, vanilla, and salt until smooth. Adjust sweetness to taste.
  3. Prepare the Molds: Mist silicone molds with nonstick spray or oil, and set on a baking sheet for stability.
  4. Create the Crunchy Base (Optional): Mix granola, biscuits, nuts, and coconut. Press mixture into the bottom of each mold.
  5. Swirl the Blueberry into the Yogurt: Add half of the cooled blueberry sauce to the yogurt and gently fold to create swirls.
  6. Fill the Molds: Spoon swirled yogurt into molds and top with reserved blueberry sauce. Create additional swirls with a toothpick.
  7. Freeze the Yogurt Bites: Freeze for at least 4 hours or overnight. Unmold and cut if using a tray.
  8. Serve with a Twist: Let bites sit for 3-5 minutes before serving, optionally drizzle with honey and garnish.

Notes

Customize with nuts or granola for added texture. Serve with fresh fruits or almond milk for a refreshing snack.
