  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup cold water
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix flour and butter in a bowl until crumbly.
  3. Add cold water gradually to form a dough.
  4. Wrap the dough in plastic and refrigerate for 30 minutes.
  5. Cook beef, onions, bell peppers, and garlic in a skillet until the beef is browned.
  6. Add cumin, paprika, salt, and pepper; mix well.
  7. Roll out the chilled dough on a floured surface and cut it into circles.
  8. Place a generous spoonful of the beef mixture in the center of each circle.
  9. Fold and seal the edges, crimping with a fork.
  10. Brush the empanadas with the beaten egg.
  11. Bake for 25-30 minutes until golden brown.

Notes

Serve warm with fresh cilantro or spicy llajwa salsa. You can also freeze the empanadas before baking for later enjoyment.
