A creamy and vibrant dip featuring Boursin cheese topped with a fresh tomato mixture, perfect for gatherings.

  • 8 ounces Boursin cheese (any flavor)
  • 1 cup diced fresh tomatoes
  • 1/4 cup finely chopped red onion
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 loaf of French baguette or Italian bread, sliced for toasting
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the diced tomatoes, chopped red onion, chopped basil, balsamic vinegar, minced garlic, salt, and black pepper in a mixing bowl. Stir to mix.
  3. Arrange the sliced baguette or Italian bread on a baking sheet and drizzle olive oil over each slice. Toast in the oven for about 5-7 minutes.
  4. Remove the bread from the oven and let it cool slightly.
  5. Spread the Boursin cheese evenly on a serving dish to create a base.
  6. Spoon the tomato mixture over the Boursin cheese and spread it out evenly.
  7. Garnish with extra basil leaves or a drizzle of balsamic glaze. Serve immediately with toasted bread.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Keep bread separate until serving.
