  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 teaspoon onion powder

  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, roughly chopped
  • 8 ounces Boursin cheese (any flavor)
  • 3 cups chicken broth
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) to prepare for baking this delicious dish.
  2. Sauté the chicken pieces in olive oil over medium heat, adding garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes.
  3. Add the broccoli florets, cherry tomatoes, and spinach to the pan. Cook for an additional 2-3 minutes.
  4. Pour in the chicken broth and bring the mixture to a gentle boil.
  5. Stir in the orzo pasta and dollop in the Boursin cheese; gently mix until combined.
  6. Remove from heat and top with shredded mozzarella cheese.
  7. Transfer to the oven and bake for 20-25 minutes, until bubbly and golden brown.
  8. Let it cool for a few minutes before serving.
